Delicate and silky. Made from the fine-skinned, tight-bunched Monastic variety grown on the sandy, steep slopes of the foothills located in the west of the central peninsular system. A wild mountain range dotted with vineyards of unknown origin with high altitudes and orientations spread over tiny plots. Ageing in Jarsand barrels. Unfiltered and handmade it’s balance and elegance is amazing, with a lovely lightness of touch in the extraction. The fruit is pure, and the complex. Loads of structure on the palate, with evident tannin. Dry on the finish.

Vinos al Margen is a small winery founded in Salamanca in 2012 with the aim of recovering, preserving and vinifying the ancient and heterogeneous vineyards in danger of extinction in our area. Daniel Ramos oversees the winemaking for several small growers and producers spread through western Spain. They elaborate in a traditional way, based on an organic agriculture that accompanies and harmonizes with the nature of the terroir. They focus on little-known, often old grape varieties from little-known regions.
