The bouquet has a combination of delicate floral top notes but has a fresh tropical citrus palate that complements the seven traditional botanicals usually found in gin. Juniper, bitter Orange, Angelica and Orris Root and Fennel for those who aren’t in the know. While the aroma is quite aromatic, the palate is savoury with liquorice notes, balanced by the citrus on the finish.

This beautiful gin is an homage to the dancehall days of 1920s Manila and its crown jewel, the legendary Santa Ana Cabaret, once the largest in the world. Set amidst the splendour of the Philippine Art Deco Movement, Santa Ana Cabaret was a musical playground for Manileños of the time. Botanicals include Juniper, Coriander, Lemon, Bitter Orange, Angelica Root and Orris Root which lay the foundation for an addition of four carefully selected botanicals from the Philippines. Ylang ylang and Alpina bring a delicate floral fragrance extracted using a partial vacuum distillation, whilst calamansi and dalandan citrus add a fruity zesty charm. Santa Ana’s key botanicals reflect the Philippine unique environment where the tropical jungle meets the evergreen forest.
