Everything revolves around gravity. And the very smallest details at the heart of creating the finest wines. At Herdade da Malhadinha Nova, nothing happens by chance. Built from the ground up in 2003, the winery, purposefully embedded into a hill, takes advantage of the natural slope for the vinification process. The grapes, cut from the vines, travel by hand in 12kg baskets to where they are, gratefully, received to begin the winemaking process. Under a watchful eye, they reach the selection table after sorting in the vineyard. Following the laws of physics, the grapes drop down to modern refrigerated presses where human feet crush them in the traditional way. This manual work depends on the help of the most modern vinification processes. After the use of high technology, the wine enters a rest stage several metres below ground, where it is thermally insulated. The ageing is done in French oak barrels.
