A combination of Chardonnay clones hand-picked and pressed directly into both old French oak puncheons and clay Amphora. Golden yellow in colour with gold hues. The bouquet shows aromas of green apple, stone-fruit and flint, mirrored on the palate but with a mineral tension and a lingering nutty finish. Adventurous winemaking results in a texturally different wine, a wine with depth and complexity, not fined and filtered, lifted high on the palate with a vibrant energy.
