Everflyht Vineyards Rose de Saignee

Vibrant, fresh salmon in colour, with ruby flecks and a deep pink hue. It has fine consistent bubbles, and a lively mousse to start. The bouquet is full of ripe cherry with soft undertones of strawberry and raspberry in the mid profile. Complexity and structure round off the profile with cream, butter, and fresh brioche note. The palate is fruit driven with notes of ripe red cherry and sweet wild strawberry with a soft backbone of cream. Light brioche and hints of biscuit form the profile edge. A light acidity is balanced with a rounded mouth feel that gives depth and an elegant finish.

Single estate vineyard nestled at the foot of Ditchling Beacon in the heart of the South Downs National Park. Unique in its aspect; individual terroir and microclimate – defining the character of the wine it produces – along with, a lot of hard work, and a bit of luck… Since establishment in 2016 we have begun a pioneering journey towards regenerative viticulture across the Vineyard through / Soil management to generate an increase in organic matter within the soil structure to generate higher levels of organic matter to help restore biodiversity and sequester more carbon / Planting an extensive range of cover crops between the vines to promote insect and pollinator populations during as many seasons as possible.
