Everflyht Vineyards Brut

Vibrant pale golden in colour and with fine consistent bubbles. The bouquet shows generous aromas of baked apple and red apple skin with lemon aromas. Undertones of strawberry and raspberry are followed by complexity and depth rounding off the profile with fresh biscuit and baked shortbread. The palate offers a precise backbone and vibrant acidity which give’s elegance and finesse. This structure is perfectly complemented by ripe red apple, pear and buttery lemon tart and a mix of red summer fruit notes. Bready brioche and hints of fresh biscuit form the profile edge on the finish.

Single estate vineyard nestled at the foot of Ditchling Beacon in the heart of the South Downs National Park. Unique in its aspect; individual terroir and microclimate – defining the character of the wine it produces – along with, a lot of hard work, and a bit of luck… Since establishment in 2016 we have begun a pioneering journey towards regenerative viticulture across the Vineyard through / Soil management to generate an increase in organic matter within the soil structure to generate higher levels of organic matter to help restore biodiversity and sequester more carbon / Planting an extensive range of cover crops between the vines to promote insect and pollinator populations during as many seasons as possible.
